Born in the Puglia region, now loved everywhere, the Orecchiette pasta format, also called "strascinati", are the most typical pasta format of the Apulian cuisine. With a round disc shape, slightly hollow in the center, in the Apulian gastronomic tradition of homemade pasta, the orecchiette were made with white flour, durum wheat semolina and water. Once in small pieces of dough, they "trailed" with the tip of a knife to get a sort of little shell, then thhis pasta was turned back with the tip of the thumb. In the traditional Apulian recipe, orecchiette are cooked together with turnip tops. Also recommended with meat and as a pasta bake.
