The Sfoglia Grezza produced is made from durum wheat semolina, bran and middlings, and is inspired by an ancient recipe from Fara San Martino: at the time, farmers would grind the durum wheat from their fields in small local mills, obtaining a coarse, slightly dark, unrefined semolina, which was then mixed with cold water to make the pasta.
