Born in Puglia, now loved everywhere, the Orecchiette (tranlsates "little ears") are the most typical pasta of the Apulian cuisine. It's shaped like a round disc slightly hollow in the center. In the Apulian gastronomic tradition of home-made pasta, once small pasta dough are made, they are "dragged" with the tip of a knife to shape them like a little shell, and then are turned backwards with the tip of the pasta maker's thumb. In the traditional Apulian recipe, orecchiette are cooked together with turnip tops. They are also delicious with meat sauces and baked.
