Their name derives from "paccarià" which in the Neapolitan dialect means "slap": in fact this noise is heard when they fall into the sauce and reminds of a 'slap'. Recommended with dense and full-bodied meat sauce, such as the Neapolitan ragù, which can get inside the pasta and adds flavour to it. Alternatively suitable in pasta bake with cheese and tomato sauce or with rich fish sauces.
